Healthy Homemade Bounty Bars
Coconut-rich, naturally sweetened treats with a homemade chocolate coating.
Ingredients
- Coconut Filling
- · 200g creamed coconut (softened)
- · 75g desiccated coconut
- · 75g coconut flakes
- · 6 tbsp coconut oil
- · 3 tbsp honey
- · 1 tsp vanilla extract
- · Pinch of salt
- · 1–2 tbsp hot water, if needed
- · Optional: 1/4–1/2 cup flaked almonds or glacé cherries
- Chocolate Coating
- · 6 tbsp coconut oil
- · 5 tbsp cacao or cocoa powder
- · 6 tbsp maple syrup
Instructions
1. Soften creamed coconut in hot water.
2. Mix honey, softened coconut oil, vanilla extract, and softened coconut block.
3. Add desiccated coconut and coconut flakes. Stir in extras if using. Add salt.
4. Press into a lined 20x30cm tray. Freeze for 20 minutes.
5. Melt the coconut oil and stir in cacao and maple syrup to make chocolate.
6. Slice the coconut base into bars and coat in chocolate.
7. Chill until set. Store in fridge or freezer.
