Chocolate Orange Gluten Free Almond Cookies
These delicious, sugar-free, gluten-free and dairy-free almond cookies are such a treat for children and families.
Ingredients
- For the Cookies
- ½ Cup Coconut Oil
- 125ml Maple Syrup
- 1 Cup Ground Almonds
- 1 Cup Gluten Free Self Raising Flour
- ½ Cup Desiccated Coconut
- Zest of One Large Orange
- Pinch of Salt
- For the Chocolate Icing
- 1 ½ Tbsp Coconut Oil
- 50ml Maple Syrup
- 2 Tbsp Cacao or Cocoa
- Squeeze of Orange Juice
Instructions
- Preheat oven to 180C / 160C Fan / 350 F. Line a flat baking tray with baking paper.
- Melt the oil with the maple syrup in a saucepan. Stir and then let it cool for 5 minutes.
- Meanwhile combine all the dry ingredients in a bowl. Pour the oil and maple syrup mixture on top.
- Add the orange zest and pinch of salt. Stir the mixture.
- Use a table spoon or cookie dough scoop to pop 14 scoops of the mixture on the baking tray.
- Bake for 10-12 minutes.
- Whilst they are cooling, make the chocolate icing. Put the oil, maple syrup and cacao into the saucepan and stir over a low heat until melted.
- When the cookies have cooled, either dip them in the chocolate icing so half is covered in the chocolate deliciousness or drizzle over them all.
- Any leftover chocolate icing can be put in the fridge and enjoyed quietly as a fudgey treat.
- If they last beyond their first outing, these cookies will keep for up to 3 days in an airtight container.
